Hm ... I have been through several tutorials and material and I have never found anything about how to create a settings menu on iPhone's settings screen. Is that possible to be done with Appcelerator? If yes, any pointers please?

Indeed. Search here for Settings.bundle. You can find an example in the Kitchen Sink.
